This delicious iced dessert makes a pleasant change from the traditional steamed fruit puddings which are normally served at Christmas. It also tastes wonderful served with Christmas Pudding instead of a hard sauce.
3 pieces crystallized ginger, finely chopped
3 oz. glace cherries, finely chopped
3 tablespoons brandy
1 pint Ice-Cream made with custard base
2 tablespoons chopped blanched pistachio nuts
5 fl. oz. double cream , whipped
1 egg white, stiffly whipped
Place the ginger and cherries in a small bowl and pour over the brandy. Set aside for at least 1 hour.
Pour the ice-cream into a freezer tray and place it in the frozen food storage compartment of the refrigerator for 30 minutes or until it is almost firm. Remove the ice-cream from the refrigerator and spoon it into a chilled mixing bowl.
Set aside for 10 minutes. Beat well with a wire whisk or rotary beater. Using a metal spoon, fold in the ginger, cherries, brandy, pistachio nuts, cream and egg white. Spoon the mixture into the freezer tray and return it to the frozen food storage compartment. Allow the mixture to freeze for 1 hour or until it is firm.’
Remove the ice-cream from the com-partment. Place it in the mixing bowl and beat it well.
Put the ice-cream back in the freezer tray and return it to the compartment for 1 hour or until it is firm. It is now ready to serve.
