York Ham Cones

York Hani Cones make an exceptionally attractive first course. Serve this tasty dish with lots of thinly sliced brown bread and butter.8 oz. York ham, thinly sliced

4 tablespoons finely chopped fresh parsley

1 lb. lean cooked chicken, minced

2 fl. oz. mayonnaise

4 fl. oz. double cream

4 tablespoons very finely chopped canned pineapple

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon curry powder

Using a sharp knife, cut each slice of ham diagonally into 2 triangles. Roll the ham up into cones. Set aside.

In a medium-sized mixing bowl, beat all the filling ingredients together with a wooden spoon until they are thoroughly combined.

Fill a large forcing bag, fitted with a 1/2inch plain nozzle, with the chicken mixture and pipe the mixture into the ham cones.

Place the chopped parsley on a plate and dip the top of each cone into the parsley, so that the surface of the chicken mixture is completely coated. Place all the cones on a large serving dish. Serve immediately.
