Yonkers Pear Delight is an unusual dessert which is simply delicious served with masses of whipped fresh cream.
6 large ripe pears, peeled
15 fl. oz. medium white wine 2 oz. sugar 8 oz. Truffes aux Amandes 6 crystallized leaves
Place the pears in a large saucepan and pour over the wine. Sprinkle over the sugar and place the pan over moderate
Lathes. heat. Cover the pan and cook the pears for 20 to 25 minutes or until they are tender but still firm.
Using a slotted spoon, transfer the pears to a serving dish and set aside until completely cold. Discard the cooking liquid.
When the pears are cold remove the cores of the fruit with an apple corer, from the flat end. Using the end of a teaspoon, pack the truffle mixture into the core of each pear. Transfer the pears to an attractive serving dish. Decorate each pear with a crystallized leaf. Place in the refrigerator to chill for 30 minutes before serving.
