Yellow Split Pea Puree

Try serving Yellozo Split Pea Puree as an alternative to mashed potatoes. The puree is very nutritious and extremely tasty too!1 lb. dried yellow split peas, soaked overnight, drained, washed and drained 2v pints home-made chicken stock

Two delicious soups, Yellow Soup and Yellow Lentil Soup make colourful and warming first courses.

1 medium-sized onion

1 medium-sized carrot, scraped

1 medium-sized turnip, peeled bouquet garni, consisting of

4 parsley sprigs,

1 thyme spray and

1 bay leaf tied together

1 teaspoon black pepper

1 oz. beurre manie

1 tablespoon finely chopped fresh parsley

Place the peas in a large saucepan and add the stock, onion, carrot, turnip, bouquet garni and pepper. Place the saucepan over moderate heat and bring the liquid to the boil. Reduce the heat to low, cover the pan and simmer for 1 ½ hours or until the peas are very tender. Remove the pan from the heat.

Place the mixture in a large strainer held over a large mixing bowl. Remove and discard the bouquet garni.

Using the back of a wooden spoon, rub the mixture through the strainer to form a smooth puree. Alternatively, place the strained mixture in the jar of an electric blender and blend for 30 seconds or until the mixture forms a smooth puree.

Using a wooden spoon, beat in the bcurre manie, a little at a time, and return the mixture to the pan. Place the pan over low heat and cook, stirring, for 2 minutes or until the mixture is thick and very hot. Remove the pan from the heat and spoon the mixture into a heated .serving dish. Sprinkle with the parsley and serve immediately.
