This easy-to-makefian combines the flavours of cranberries, cream cheese and walnuts. Serve it as a refreshing end to a summer lunch or dinner.
8-inch Flan Case made with rich shortcrust pastry, baked blind and cooled
3 oz. finely chopped walnuts
10 oz. soft cream cheese
2 oz. castor sugar
½ teaspoon ground allspice
8 fl. oz. double cream , whipped until very thick but not stiff 8 oz. canned cranberries, drained
An unusual dessert with a fresh flavour, Yazoo Cranberry Flan is ideal to serve for a special dinner party.
Place the flan case on a serving plate and sprinkle in the chopped walnuts. Set aside.
Place the cream cheese, half the sugar, the allspice and cream in a medium-sized mixing bowl and beat well with a wooden spoon until the mixture is smooth and creamy.
Fold in the cranberries and spoon the mixture into the flan case, smoothing over the top with the back of the spoon.
Sprinkle over the remaining sugar and chill the flan in the refrigerator for 30 minutes before serving.
