Vermicelli is a variety of Italian PASTA, which is extruded through very small holes and then dried. In appearance it is similar to SPAGHETTI but much finer (the literal translation of vermicelli is ‘little worms’).

Vermicelli is available either in bundles or tied in loose knots. It is used primarily as a garnish for soups but may also be eaten as a first or main course, with a sauce.
