A marine reptile with a hard shell, the turtle is found in the warmer seas and rivers of the world. There are many edible varieties, the best known of which, the large green turtle, is used to make the classic turtle soup.
Turtle soup is made from the meat and shell of the turtle, which is cooked in a richly flavoured consomme seasoned with herbs and spices. The soup is additionally flavoured with Madeira or dry sherry. Canned turtle soup is also available.
Turtle meat and eggs are expensive delicacies and are much prized by gourmets. The steaks of the turtle may be pounded thin and cooked in the same way as veal escalopes.
