A delightful dish that can be made in a moment, Syllabub is a traditional English dessert. Serve either on its own iti decorative glasses or with poached fruit.2 oz. sugar juice of 1 large lemon rind and juice of | orange

6 tablespoons medium-dry sherry

2 tablespoons brandy

10 fl. oz. double cream , beaten until thick but not stiff

Syllabub Trifle, consisting of layers of fresh fruit and crushed macaroons topped with a brandy-and-wine flavoured cream, is a delightful dessert.

In a medium-sized mixing bowl, combine the sugar, lemon juice, orange rind and juice, sherry and brandy. Gradually pour the cream into the bowl, beating constantly with a kitchen fork until the ingredients are thoroughly combined.

Cover the bowl and chill it in the refrigerator for at least 30 minutes or until ready to serve.

Remove the bowl from the refrigerator and pour the syllabub into chilled indi-vidual serving dishes. Serve immediately.
