Smoked Fillet of Pork with Melon makes a refreshing and unusual appetizer, or serve it with a mixed salad as the ideal slimmers’ lunch.
1 large honeydew melon, quartered and seeded
6 oz. smoked fillet of pork, very thinly sliced
1 tablespoon lemon juice
1 teaspoon finely grated fresh root ginger
Using a sharp knife, remove the skin from the melon quarters. Cut the melon flesh into 2-inch slices. Return the melon slices to the skins alternating them with the slices of smoked pork. Pour over the lemon juice and place the melon quarters in the refrigerator to chill for 30 minutes. Remove the melon quarters from the refrigerator. Transfer them to individual serving dishes. Sprinkle over the ginger and serve immediately.
