Scampi Kebabs

These unusual kebabs, made with prawns , shelled 2 small green peppers, white pith removed, seeded and cut into equal-sized pieces 16 medium-sized mushrooms, wiped clean and stalks removed 16 sage leaves, washed and shaken dry 2 lemons, quartered and each quarter cut across in half MARINADE


11. oz. olive oil

2 tablespoons lemon juice

3 garlic cloves, crushed

1 teaspoon salt :{ teaspoon black pepper

In a large, shallow mixing bowl, combine all the marinade ingredients thoroughly. Add the prawns over occasionally.

Remove the prawns from the marinade and pat them dry with kitchen paper towels. Reserve the marinade.

Preheat the grill to moderate.

Thread 1 prawn on to a skewer, then a piece of green pepper, a mushroom, a sage leaf and a piece of lemon. Repeat the process, using 3 more skewers and allowing 4 prawns , 4 pieces of pepper, 4 mushrooms, 4 sage leaves and 4 pieces of lemon for each skewer.

Place the skewers on the rack in the grill pan and baste them with a little of the reserved marinade.

Place the pan under the heat and grill the kebabs for 10 minutes, turning them over occasionally and basting with the reserved marinade.

Remove the kebabs from the heat and place them on a warmed serving dish. Pour over the pan juices, if you wish, and serve immediately.
