Sambal III a

Sambal III is a potato sambal, zohich goes very well with kebabs, or a meat curty. If you do not like pungent food, remove and discard the seeds of the chillis before chopping them.


8 oz. potatoes, boiled in their skins, peeled and coarsely mashed

4 spring onions , finely chopped

2 green chillis, finely chopped

2 teaspoon salt

1 tablespoon lemon juice

2 tablespoons thick coconut milk

1 tablespoon chopped fresh coriander leaves

In a medium-sized mixing bowl, combine all the ingredients except the coriander leaves. Taste the mixture and add more salt or lemon juice if necessary.

Spoon the mixture into a shallow serving bowl. Sprinkle over the coriander leaves. Cover the bowl and chill the sambal in the refrigerator until ready to serve.
