Salsify Sauteed with Butter and Herbs

A beautiful way to cook a delicate vegetable, Salsify Sautecd with Butter and Herbs is an ideal side dish for a dinner party.


1 07.. butter

1 garlic clove, crushed

1 lb. salsify, trimmed, boiled and drained

2- teaspoon dried chervil

½ teaspoon dried oregano

2 tablespoons finely chopped fresh parsley

½ teaspoon salt

½ teaspoon freshly ground black pepper

1 teaspoon lemon juice

In a large frying-pan, melt the butter over moderate heat. When the foam subsides, add the garlic and fry, stirring frequently, for 1 minute. Add the salsify, chervil, oregano, parsley, salt and pepper and cook, stirring constantly, for 6 to 8 minutes or until the salsify is lightly browned. Pour over the lemon juice.

Remove the pan from the heat and transfer the salsify mixture to a warmed serving dish. Serve immediately.
