Sage and Apple Stuffed Prunes

These delicious stuffed prunes make unusual savouries for a cocktail party. They are always served cold.

24 prunes, soaked overnight and drained

1 tablespoon vegetable oil

2 green eating apples, cored and finely chopped

1 teaspoon lemon juice

½ teaspoon dried sage

2 tablespoons yogurt

1 teaspoon grated lemon rind

Using a small, sharp knife, make a slit in the side of each prune and remove and discard the stone. Set aside.

In a small saucepan, heat the oil over moderate heat. Reduce the heat to low and add the apples, lemon juice and sage, stirring frequently with a wooden spoon. Simmer for 5 minutes.

Remove the pan from the heat. Using a slotted spoon, transfer the mixture to a small mixing bowl. Discard the oil remaining in the pan.

Add the yogurt and lemon rind to the apple mixture and stir with a wooden spoon until the ingredients are thoroughly mixed. With a teaspoon, spoon a little of the apple mixture into the cavity in each prune. Place the prunes on a serving dish and chill in the refrigerator for 30 minutes.

Remove the dish from the refrigerator and serve immediately.
