Rock Salmon

Rock salmon, or dogfish, is a member of the shark family. It has bluish-grey to brown skin and weighs between 3 and 5 pounds. The flesh is white but has a coarse texture and not much flavour.

Rock salmon is best deep-fried, poached or baked with a sauce.
