Provolone is an Italian cheese which was first made over a 1,000 years ago. It is produced from either buffalo’s or cow’s milk and comes in numerous shapes and sizes – it may be presented in the shape of a pear or melon, for example, or as a sausage or even a pig. The cheese should be soft, firm yet malleable and creamy-yellow in colour.

It is best eaten fresh but Provolone which has become dry or hard is suitable for cooking.
