A traditional Scottish breakfast dish, Porridge is a warming and filling cereal made from oatmeal and water. Serve sprinkled with salt and a bowl of cold milk or cream. For those with a sweet tooth, sugar or honey may be served with porridge instead of salt.


1 pint water

4 oz. medium oatmeal

1 teaspoon salt

In a medium-sized saucepan, bring the water to the boil over moderate heat. Gradually sprinkle over the oatmeal, stirring constantly. Reduce the heat to low and simmer the porridge for 15 minutes, stirring frequently. Add the salt and cook, stirring constantly, for a further 5 minutes.

Remove the pan from the heat, pour the porridge into individual warmed serving bowls and serve immediately.
