This very simple dessert is ideal as a light and refreshing end to a rich meal.
1 medium-sized fresh pineapple, peeled, cored and thinly sliced into rings
1 tablespoon castor sugar
1 fl. oz. kirsch
Lay the pineapple rings in a medium-sized, shallow serving dish. Sprinkle on the sugar and pour over the kirsch.
Place the dish in the refrigerator and marinate the pineapple for 3 hours, basting and turning the slices frequently.
Remove the dish from the refrigerator and serve immediately.
