Polio alia Cacciatora

A traditional Italian dish, Polio alia Cacciatora (poh-loh ahl-lah kah-chi-at-tov-vah) may be served with mashed potatoes and green beans or steamed broccoli.

1 tablespoon butter

1 tablespoons olive oil

2 garlic cloves, crushed

2 spring onions , finely chopped

6 oz. mushrooms, wiped clean and sliced

1 X 4 lb. chicken, cut into

8 serving pieces

1 teaspoon salt

½ teaspoon black pepper

6 fl. oz. dry white wine

2 fl. oz. chicken stock

6 medium-sized tomatoes, blanched, peeled, seeded and coarsely chopped large bay leaf

1 teaspoons beurre manie

1 tablespoon chopped fresh parsley

In a medium-sized flameproof casserole, melt the butter with the oil over moderate heat. When the foam subsides, add the garlic and spring onions and cook, stirring occasionally, for 3 to Two super Italian chicken dishes ideal for dinner parties – Polio alia Bolognese and Polio alia Cacciatora. minutes or until the onions are soft and translucent but not brown. Add the mushrooms and cook for a further 3 minutes, stirring frequently. Using a slotted spoon, remove the vegetables from the casserole and set them aside on a plate.

Add the chicken pieces to the casserole and cook, turning them frequently with tongs, for 8 to 10 minutes or until they are lightly and evenly browned. Add the salt, pepper, wine, stock, tomatoes, bay leaf and the mushroom and onion mixture.

Bring the liquid to the boil, stirring constantly. Reduce the heat to low, cover the casserole and simmer for 40 minutes or until the chicken pieces are tender.

Remove the casserole from the heat and, using a slotted spoon, transfer the chicken pieces to a warmed serving dish. Set aside and keep warm.

Place the casserole over moderate heat and boil the sauce, stirring frequently, for 3 to 5 minutes or until it has reduced slightly. Stir in the beurre manie, a little at a time, and cook for a further 3 minutes or until the sauce is smooth and fairly thick.

Remove the casserole from the heat and remove and discard the bay leaf. Pour the sauce over the chicken pieces, sprinkle over the parsley and serve immediately.
