Pear Salad

Serve Pear Salad with cold ham or poultry. The dressing may be prepared in advance but the pears must be cut and peeled at the last minute. If Beurre Hardy pears are not available, Cornice pears may be substituted.2 tablespoons cream cheese

2 tablespoons single cream

2 tablespoons lemon juice

1 tablespoon apricot jam, strained

5 fl. oz. mayonnaise

1 cos lettuce, outer leaves removed, washed and separated into leaves

4 large ripe Beurre Hardy pears, peeled, cored and cut into

6 slices

1 tablespoon capers

In a small mixing bowl, mash the cream cheese with the cream, lemon juice and apricot jam. Beat in the mayonnaise. Taste the dressing and add some salt or sugar if necessary. Set aside.

Tear the lettuce leaves in half and arrange them on individual plates. Ar-range the pear slices on top and pour the dressing over them. Scatter the capers over the dressing and serve immediately.
