Pear and Chicory Salad

A refreshing first course, Pear and Chicory Salad is simple and quick to prepare.

4 fl. oz. French Dressing

1 teaspoon prepared French mustard

1 teaspoon sugar

8 oz. chicory , cleaned and cut into

1-inch slices

2 large ripe pears, peeled, cored and thinly sliced

2 tablespoons chopped walnuts

2 tablespoons raisins

8 round lettuce leaves, washed and shaken dry

In a large mixing bowl, combine the French dressing, mustard and sugar, beating with a fork until the ingredients are well mixed.

Add the chicory , pears, walnuts and raisins to the bowl. Using two spoons, toss the mixture until it is coated with the dressing.

Line 4 individual serving dishes with the lettuce leaves. Spoon equal quantities
