Parfait is a frozen dessert somewhat similar to a mousse but much creamier and richer. It was originally made on a base of coffee cream but is now made in a variety of flavours, such as raspberry, butterscotch and liqueur.

Parfait is often served in special tall glass dishes called parfait glasses.

Paris-Brest, made of crisp choux pastry and filled with Creme Pdtis-siere, may be served as a dessert with fresh fruit salad.
