Nursery Cakes

Little squares of chewy biscuit glace cherries and milk, Nursery Cakes are ideal for a children’s tea-party, and are very quick and easy to prepare.


3 oz. plus

1 teaspoon butter, melted

8 oz. crushed shortbread biscuits

2 oz. soft brown sugar

4 oz. walnuts, chopped

4 oz. sultanas or seedless raisins 6 oz. glace cherries, halved 8 fl. oz. sweetened condensed milk

Using the teaspoon of butter, grease a 9-inch square baking tin and set aside.

Place the crushed biscuits and sugar in a large mixing bowl. Pour on the remaining melted butter and, using a wooden spoon, mix the ingredients to-gether thoroughly. Press the mixture into the bottom of the prepared tin. Place the tin in the refrigerator to chill for 30 minutes.

Remove the tin from the refrigerator. Sprinkle the walnuts and sultanas or seedless raisins evenly over the biscuit crust.

Arrange the cherries on the top and pour over the milk. Set aside for 30 minutes.

Preheat the oven to warm 325 °F (Gas Mark 3, 170°C).

Place the tin in the oven and bake for 10 to 15 minutes or until the visible milk has set.

Remove the tin from the oven and set aside to cool completely. When the cake is cold, cut it into l2-inch squares and serve.
