Northern Lights

A simple but filling dessert, Northern Lights are sweet crepes filled with jam and cream. Serve them hot after a light meal or for tea.

5 oz. sweet Crepe batter

8 tablespoons blackberry, redcurrant or strawberry jam

5 fl. oz. double cream , stiffly whipped

2 tablespoons icing sugar, sifted

Fry the crepes according to the instruc-tions in the basic recipe and keep them warm.

Put a spoonful of jam and a spoonful of whipped cream in the centre of each crepe. Roll them up and place them on warmed serving dishes. Sprinkle with the icing sugar. Serve immediately.
