Mushrooms with Tarragon Mayonnaise

A delicious salad to serve wit/i cold meats, Mushrooms with Tarragon Mayonnaise is an excellent and quickly made dish for a light luncheon or supper.

6 fl. oz. cup mayonnaise

1 tablespoon tomato ketchup

1 tablespoon fresh lemon juice

2 teaspoons chopped fresh tarragon or f teaspoon dried tarragon

1 teaspoon salt

2 teaspoon white pepper

6 oz. mushrooms, wiped clean and sliced

2 celery stalks, trimmed and cut into ;{-inch lengths

2 small cucumber, peeled and diced

2 tablespoons chopped cashew nuts

2 tablespoons chopped fresh chives

Place the mayonnaise in a serving bowl large enough to hold all the ingredients. Mix in the tomato ketchup, lemon juice, tarragon, salt and pepper.

Add the mushrooms, celery, cucumber and nuts. Stir well until all the ingredients are thoroughly combined and the vege- tables and nuts are coated with the mayonnaise mixture. Sprinkle over the chives.

Place the bowl in the refrigerator and chill for 1 hour before serving.
