Meringues are a confection made from sugar and egg white. Their history is obscure though they were most probably first made in the eighteenth century cither in France or Switzerland. They were a favourite dessert in the court of Louis XVI and particularly of Marie Antoinette who was reputed to be skilled in the making of meringues.

There are three kinds of meringues- SUISSE, CUITE and ITALIENNE – and a recipe for each is given below.
