A refreshing summer drink, Melonade is easy to make and economical when melons are plentiful. Serve Melonade with lots crushed ice. If you have a blender, use it instead of the strainer to puree the melon. If you like, garnish the Melonade with mint sprigs or fresh fruit.



1 lb. ripe cantaloup melon, weighed when peeled and seeded thinly peeled rind and juice of

2 lemons

2 tablespoons sugar

1 pint soda water

Cut the melon into chunks and, with the back of a spoon, press it through a strainer into a large mixing bowl. Transfer the melon puree to a large jug. Set aside.

Place the lemon rind and juice in a small saucepan with the sugar. Put the pan over moderate heat and stir to dis-solve the sugar. Remove the pan from the heat. Strain the lemon mixture into the jug and mix thoroughly with the melon puree.

Pour in the soda water and mix well. Place the jug in the refrigerator to chill until you are ready to serve.
