Mamaliga (mah-mah-lec-gah) is a corn meal mush similar to Italian polenta. It is a staple food in Romania and is eaten as a porridge, made into bread, served hot or cold with cream and cooked with cheese and other foods. The Romanians call it Mamaliga de Aur c-ow), or bread of gold, partly because of its golden colour and partly because of its importance in the national diet.
