Maitre d’Hotel Butter

Quick and simple to make, Maitre d”Hotel Butter is a suitable accompaniment grilled meat or fish and many boiled or steamed vegetables.

2 OUNCES

2 oz. butter

2 teaspoons finely chopped fresh parsley

1 teaspoon lemon juice

½ teaspoon salt

½ teaspoon white pepper

In a small mixing bowl, cream the butter with a wooden spoon until it is soft. Add the parsley, lemon juice, salt and pepper and mix well. Spread the butter on a small plate and mark it into squares or rounds. Chill in the refrigerator for 45 minutes before using.
