Jamon con Nabos

Filling, warming and tasty, Jamon con Nabos (jawm-ohn kohn nah-bohs) is the ideal dish for a family supper. Serve it on its own or with mashed potatoes.4 tablespoons vegetable oil

1 onion, chopped

1 garlic clove, chopped

1 lb. smoked ham, coarsely chopped

1 tablespoon flour

1 pint water

1 teaspoon salt

½ teaspoon black pepper

1 bay leaf

1 tablespoon chopped fresh parsley

1 lb. turnips, peeled and diced

In a medium-sized flameproof casserole or saucepan, heat the oil over moderate heat. Add the onion and garlic and fry, stirring occasionally, for 5 minutes. Add the ham and fry for a further 5 minutes, stirring frequently.

Stir in the flour and cook, stirring constantly, for 2 minutes.

Add the water, salt, pepper, bay leaf, parsley and turnips. Bring to the boil, stirring constantly.

Reduce the heat to low, cover the pan and simmer for l- hours, or until the turnips are tender.

Remove the casserole or saucepan from the heat, remove and discard the bay leaf and serve at once.
