This very unusual vegetable dish is excellent with any roast meat, but goes particularly well with beef.
1 oz. butter
1 large onion, finely chopped
3 tomatoes, blanched, peeled and chopped
5 bananas, sliced crosswise
½ teaspoon salt
4 tablespoons white wine
In a medium-sized frying-pan, melt the butter over moderate heat. When the foam subsides, add the onion and fry, stirring occasionally, for 5 to 7 minutes, or until it is soft and translucent but not brown.
Add the tomatoes, bananas, salt and wine. Reduce the heat to low and simmer the mixture for 10 to 15 minutes, or until the bananas are tender.
Remove the pan from the heat and turn the mixture into a warmed serving dish. Serve at once.
