Independence Cake

Independence Cake is a fruit cake, first made in 1776 to celebrate American Independence. In the original recipe the ingredients were in enormous propor- tions: 20 pounds of flour, 15 pounds of sugar, 10 pounds of butter, 48 eggs, 1 quart of wine, 1 quart of brandy, 5 pounds of currants, 5 pounds of raisins etc.

It is sometimes still made in America (in rather smaller quantities) to be eaten on the 4th of July.
