Horseradish Sauce (Cold)

Horseradish Sauce is the classic accompaniment to roast beef. It is also excellent with cold beef.

1 teaspoon lemon juice

1 teaspoons vinegar

1 teaspoon prepared mustard

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon sugar

3 tablespoons grated fresh horseradish

5 fl. oz. double cream , stiffly whipped

In a medium-sized mixing bowl, combine the lemon juice, vinegar, mustard, salt, pepper, sugar and horseradish.

Fold in the cream and spoon the sauce into a sauceboat. Serve cold.
