Haroset II

A Middle Eastern Haroset, this is made with pine nuts, ground almonds, apple and raisins.


2 oz. pine nuts

1 hard-boiled egg yolk % <&

1 apple, peeled, cored and grated

4 oz. ground almonds

4 oz. brown sugar

1 tablespoon grated lemon rind

1 teaspoon ground cinnamon

1 teaspoon ground allspice

1 tablespoons lemon juice

1 oz. seedless raisins

2 oz. matzo meal

In a large mixing bowl, combine all the ingredients and mash them to a paste with a fork. Press the mixture into a shal- low baking tin. With a sharp knife, score the surface of the mixture, dividing it into an even number of pieces. Place the baking tin in the refrigerator to chill for 30 minutes before cutting into squares and serving.
