A simple Italian dish, Green Peas with Ham can be served as a light lunch on its own or with a green salad and crusty bread or boiled rice.
2 lb. fresh green peas, shelled
1 tablespoon sugar
1 teaspoon salt
1 oz. butter
1 large onion, thinly sliced and pushed out into rings
8 thick slices prosciutto, cut into strips
1 tablespoon finely chopped fresh basil or
1 teaspoon dried basil
½ teaspoon black pepper
Put the peas in a medium-sized saucepan. Sprinkle on the sugar and salt. Add’ enough water just to cover the peas. Place the pan over moderately high heat and bring the water to the boil. Reduce the heat to moderate and cook for 8 minutes, or until the peas are just tender.
Meanwhile, in a medium-sized frying-pan, melt the butter over moderate heat. When the foam subsides, add the onion and cook, stirring occasionally, for 8 to 10 minutes or until it is soft and golden. Add the ham, basil, remaining salt and the pepper. Stir well and reduce the heat to moderately low. Cook, stirring occa-sionally, for 10 minutes.
Drain the peas in a colander and stir them into the ham mixture.
Remove the frying-pan from the heat and transfer the mixture to a heated serving dish.
