Gratin, au

Au gratin (oh gra-tan) is a French term used for a dish that is sprinkled with breadcrumbs and/or grated cheese and then browned, cither in a hot oven or under the grill .

The term is frequently mistakenly thought to apply only to dishes topped with cheese, but it does, in fact, mean only the thin brown crust formed by grilling or heating in the oven.
