A dessert that children will love, Golden Gooseberry Bake is very quick, easy and economical to make.
2 lb. gooseberries, trimmed and washed
4 oz. sugar
4 tablespoons water
2 oz. cornflakes
These attractive Golden Biscuits have a rich nutty flavour.
1 oz. rolled oats
1 oz. butter
2 tablespoons golden syrup
1 tablespoon brown sugar
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
Put the gooseberries, sugar and water in a medium-sized saucepan. Cover the pan and place it over moderate heat. Cook the gooseberries for 10 to 15 minutes, or until they are just soft.
Remove the pan from the heat and turn the gooseberries into a medium-sized baking dish.
Put the cornflakes in a medium-sized mixing bowl and crush them lightly with your hand. Add the rolled oats.
In a small saucepan, melt the butter with the syrup over moderate heat. When the butter has melted, remove the pan from the heat and pour the butter mixture over the cornflakes and oat mixture. Stir to coat them well and spoon the mixture over the top of the gooseberries.
Sprinkle the brown sugar over the top and place the dish in the oven. Bake for 20 minutes, or until the top is lightly browned.
Serve at once.
