Ginger Sauce

Delicious Ginger Sauce is served hot zuith hot or cold puddings or ice-cream.



3 oz. light brown sugar

8 fl. oz. water

4 tablespoons thinly sliced preserved ginger

1 tablespoon lemon juice

In a small saucepan, dissolve the sugar in the water over low heat, stirring constantly. When the sugar has dissolved, increase the heat to high and boil, without stirring, until the syrup is thick. Stir in the ginger and lemon juice. Pour the sauce into a sauceboat and serve.

If the sauce is not served immediately, keep it hot by placing the sauceboat in a pan of barely simmering water.
