Garlic Bread

An excellent accompaniment to most savoury dishes, Garlic Bread is very simple to make.

8 oz. butter, softened

2 tablespoons finely chopped fresh parsley 2 garlic cloves, very finely chopped 2 long loaves of French bread

Preheat the oven to fairly hot 400°F (Gas Mark 6, 200°C).

In a small mixing bowl, cream the butter, parsley and garlic together with a wooden spoon. With a large knife, thickly slice the loaves crosswise to within about :’, -inch of the bottom.

Spread the butter mixture generously on one side ofeach of the slices. Wrap the loaves in aluminium foil and place them on a baking sheet in the centre of the oven. Bake for 15 to 20 minutes, or until the bread is very crusty and the butter has melted.

Remove the loaves from the oven and serve immediately, in the foil.
