Garam Masala

Garam masala (guh-rum mah-sah-lah) is a mixture of dried spices, ground or pounded together, which is used exten-sively in Indian cooking. Garam masala may be bought already ground in Oriental groceries and in the larger super-markets. In India most cooks grind their own to suit their individual tastes. The spices usually included are black pepper-corns, cinnamon, black cumin seeds, cloves, coriander seeds and cardamom seeds.
