An inexpensive and tasty dish of grilled gammon steaks served with pineapple in a sage and onion sauce, Gammon with Pineapple makes an excellent light lunch or dinner.
1| lb. canned pineapple chunks
1 oz. butter
1 small onion, finely chopped
1 teaspoon dried sage
2 teaspoon cornflour dissolved in 1 teaspoon pineapple juice
4 large gammon steaks
2 teaspoon salt -½ teaspoon black pepper
Preheat the grill to moderate.
Drain the pineapple chunks, reserving 3 fluid ounces of the can juice. Set the pineapple chunks aside.
In a medium-sized saucepan, melt the Gammon Baked with Herbs is an un-usual and tasty dish, hot with vegetables or cold with salads. butter over moderate heat. When the foam subsides, add the onion and cook, stirring occasionally, for 5 to 7 minutes or until it is soft and translucent but not brown. Add the drained pineapple chunks and sage and cook, stirring frequently, for 6 minutes. Stir in the reserved pineapple juice and the cornflour, mixture. Cook, stirring constantly, for 3 minutes, or until the mixture is thick and hot. Remove the pan from the heat and keep warm while you cook the steaks.
Rub the gammon steaks all over with the salt and pepper. Place them under the grill and cook for 5 minutes on each side.
Remove the steaks from the heat and transfer them to a heated serving dish. Pour over the pineapple mixture and serve at once.
