A cooking vessel in which meat, fish, poultry, game and vegetables are cooked gently, and usually, for a long time.

Casseroles come in all shapes’and sizes. They all have a tightly fitting lid and two handles. They can be made of pottery, glass, enamelled cast iron, terracotta, china, copper and enamel, and are either flameproof (to be used on top of the stove and in the oven) or ovenproof (for oven use only). The dish cooked in a casserole is often called after it.
