These are small, dainty savouries that are served hot or cold as cocktail snacks, appetizers or after a meal. The base of canapes can be small biscuits, pastry or fried bread, cut into fancy shapes.
The toppings should be colourful, tasty and can be meat, fish, eggs or vegetables. Sometimes a thin layer of aspic jelly
is spooned over each canape and this keeps the topping from drying out.
If canapes are served with drinks or before a meal, a selection of different flavours, textures and colours should be made and then arranged on a large tray.
