Broccoli cooked with tomatoes, celery, onion and green pepper is a colourful vegetable dish.
1 oz. butter 4 tomatoes, blanched, peeled, seeded and coarsely chopped
3 celery stalks, diced
1 garlic clove, crushed
1 small onion, chopped
2 green peppers, seeds and white pith removed and chopped
1 teaspoon salt
teaspoon dried basil
4 grindings black pepper
2 lb. broccoli, washed and trimmed
1 teaspoon cornflour
Melt the butter in a large saucepan over moderate heat. Add the tomatoes, celery, garlic, onion, green peppers, salt, basil and pepper. Stir well and cook for 2 minutes. Remove the pan from the heat. Place the broccoli on top of the other
vegetables. Return the pan to the heat, cover and cook for 15 to 20 minutes, or until the broccoli is tender.
Remove the broccoli from the pan and place it on a warmed serving dish. Keep hot.
Stir the cornflour into the vegetable mixture in the pan and cook until the liquid has thickened slightly. Pour the sauce
