A vegetable of the same species as the cauliflower, broccoli is native to southern Europe and was introduced into England

from Italy in the early eighteenth century. There are a number of varieties of broccoli, of which the most interesting and common is Calabresse, an Italian green sprouting broccoli. Once available only in the spring it is now in the shops most

of the year. It is noted for its fine, delicate flavour and is often eaten like asparagus with melted butter.

To prepare and cook Italian broccoli cut off the lower, tough part of the stalks. Peel the stalks from the butt of the stem upwards and remove all wilted leaves. Split the large bunches in half lengthways so that all the stalks are of uniform thickness. Make a

½ inch slit in the butt end of the stalks.

Soak the prepared broccoli for 15 minutes in cold, salted water to draw out any small insects.

The cooking time should not exceed 15 minutes. If you overcook the broccoli, the heads will become mushy. Because the heads are more tender than the stalks, Italian broccoli is sometimes cooked like asparagus, tied in bundles and cooked

with the heads out of the water. Or the heads are cut off and cooked separately.

When the broccoli is cooked, drain it in a colander. Turn the broccoli into a warmed serving dish and dot it with butter.

Serve it at once.

Other types of broccoli include a white variety which resembles a small cauliflower and which is cooked in a similar way.

The other sprouting vari-eties, purple, green and white, may be cooked like the Italian broccoli or they may be first

blanched and then dipped in batter and deep-fried.
