A moist bread, Banana Walnut Loaf is very easy to make and good to serve at tea-time or with coffee.
5 oz. sugar
2 oz. plus
1 teaspoon vegetable fat
4 bananas, mashed
8 oz. flour
1 teaspoon baking powder
2 teaspoon salt
½ teaspoon bicarbonate of soda
6 oz. walnuts, chopped
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C). Grease a 9-inch loaf tin with
1 teaspoon fat.
In a medium-sized mixing bowl, beat the sugar, vegetable fat and eggs together with a wooden spoon. Beat until it is light. Beat in the bananas.
Sift the flour, baking powder, salt and soda into the banana mixture and beat well. Stir in the walnuts.
Pour the mixture into the loaf tin and bake for 1 hour, or until the loaf is done. Test by inserting a warm, dry skewer in
the centre of the loaf. If it comes out clean, the loaf is ready. Turn the loaf out of the tin and allow to cool before
