A good way to use a soft, slightly over-ripe avocado, this dressing be used for a simple lettuce and tomato salad.
1 teaspoon salt
4 grindings black pepper
½ teaspoon dried basil
½ teaspoon dried oregano
2 fl. oz. vinegar
6 fl. oz. olive oil
1 medium-sized avocado, peeled, stone and pureed
In a small bowl, mix the salt, pepper, basil, oregano, vinegar and oil.
Gradually add the mashed avocado to the dressing until well blended.
