Aubergines Sauteed

This is a quick and easy way to serve this vegetable. Sauteed aubergines go well with light meat or fish dishes. aubergines

2 tablespoons salt

1 tablespoons flour

6 tablespoons cooking oil

2 tablespoons chopped parsley

With a sharp knife, peel the aubergines. Cut them into f-inch cubes. Put the cubes into a colander, sprinkle them with salt and leave them to drain for 30 minutes.

Dry the aubergines on kitchen paper towels and sprinkle them with the flour.

Heat the oil in a heavy, medium-sized frying-pan over moderate heat. Put in the aubergine cubes and fry them briskly for 10 minutes, or until they are tender.

Remove the aubergine cubes with a slotted spoon. Put them in a warmed vegetable dish and sprinkle on the parsley.
