Apricots in Brandy

Elegant and expensive, this dessert is easily made and can be prepared a week or even two weeks in advance of a special dinner party. Apricots in Brandy can be served alone or as a sauce for ice cream.

1 lb. dried apricots

4 oz. sugar brandy

Place the ap:icots and sugar in a mixing bowl. Pour over enough brandy to completely cover the fruit. Cover and leave in a cool place for at least 36 hours. The longer the apricots are soaked the more the flavour improves. Serve chilled.
