Zvezdochki (sveh/.-dau-kee) are delicious additions to a pet its-fours tray or serve them as a snack with tea or coffee.
4 eggs, well beaten
6 oz. sugar
1 teaspoon vanilla essence
8 oz. unsalted butter, melted
12 oz. self-raising flour
1 teaspoon icing sugar
Preheat the oven to moderate 350′ F (Gas Mark 4, 180°C).
Place the eggs in a large mixing bowl and add the sugar and vanilla essence. Using a wire whisk, blend them together.

Using a small star-shaped pastry cutter, cut out 36 dough shapes. Place the dough shapes on a baking sheet and place the sheet in the oven. Bake for 10 to 12 minutes or until the biscuits are golden brown. Remove the sheet from the oven and, using a flat-bladed knife, transfer the biscuits to a wire rack to cool slightly.
Sprinkle a little icing sugar over the biscuits to dust them lightly. Allow to cool completely.
Serve immediately or store in an airtight tin until required.
