Zuzu Spiced Chicken Breasts make an excellent supper dish. Serve with buttered noodles, sprinkled with oregano and – a bottle of well-chilled dry white wine.
3 oz. butter
2 tablespoons clear honey
1 garlic clove, crushed
1 teaspoon ground ginger
1 teaspoon salt
1 teaspoon black pepper
4 chicken breasts, skinned
3 tablespoons sesame seeds
Preheat the oven to fairly hot 400°F (Gas Mark 6, 200°C).
In a large frying-pan, melt the butter over moderate heat. When the foam sub-sides, add the honey and, stirring con stantly, fry for 3 minutes. Add the garlic, ginger, salt and pepper.
Increase the heat to moderately high and add the chicken breasts. Fry for 4 minutes on each side or until the chicken breasts are golden brown all over.
Transfer the chicken to an ovenproof baking dish and sprinkle over the sesame seeds. Pour over the cooking juices and place the dish in the oven for 25 to 30 minutes or until the chicken is tender and the juices run clear when it is pierced with the point of a sharp knife.
Remove the dish from the oven and serve immediately.
